Tequila Facts

In 1795, known to be the first producer of Tequila in the world and the first to receive an official permit from the King of Spain, Jose Maria Guadalupe de Cuervo made the very first Vino Mezcal de Tequila de Jose Cuervo commercially.

The production of Tequila is administered by the Declaration for the Protection of the Denomination of Origin (DOT), which is why tequila is only produced in Jalisco, Michoacan, Nayarit, Guanajuato, and Tamaulipas. All real tequilas in the world are made with Blue Agave or agave azul; anything else that is grown outside from Mexican town of tequila is not considered tequila. DOT was established in 1997 providing strict requirements on the production of Tequila. To keep track of the production of Tequila, they created standards to easily identify where the tequila was produced. For Jose Cuervo’s tequila, they have Normas Oficiales Mexicanas (NOM) numbers (1104 and 1122) to authorize that they are real tequilas.

Many people think tequila is a lot stronger than regular sprits; however, tequila is not stronger. It is the unique and intense taste that you experience when you straight shot it. Any plant from the Agave Azul Tequilana Weber variety can be used in the production of tequila. The agave plants take 6 to 12 years to mature, which is when they are at their prime to harvest the sugars from the heart of the plant, or piña. It is called piña because the heart takes after a pineapple once it is harvested and sugars are extracted. After the tequila is harvested, they are placed into wood or oak barrels, depending on the type of tequila you are producing. If the tequila is placed into wood barrels for a minimum of two months, they are being produced as “reposados” or “rested” tequila. Tequila that has been “rested” creates an outstanding smoothness and great flavor. If the tequila is placed into oak barrels for at least one year, then they are being produced as “añejo” or “aged”.

Regardless of the type of tequila companies’ produce, the secret holds the true taste of real tequila. If they don’t make it right, you won’t have great tasting tequila.
